Plan Ahead for Easy Preparation

This pizza is ideal for prepping the night before. Prepare the dough and toppings ahead so in the morning you only need to roll out the dough, assemble the pizza and bake. Precooked and crumbled bacon stores well and speeds up assembly.

Is Breakfast Pizza Good for You?

This breakfast pizza packs protein from eggs and bacon, which helps keep you full through the morning. While it’s not low-calorie, it’s a more satisfying choice than many sugary breakfast options.

How to Make Pizza Dough From Scratch

The bread-machine dough I use makes pizza dough simple and reliable. Use your favorite dough recipe, a refrigerated dough, or pre-made crust. If using homemade dough, refrigerate for at least four hours or overnight for better texture.

This recipe uses half of a standard dough batch so you can save the remainder for another pizza. Consider serving a different pizza for dinner using the second half.

Do You Precook Bacon for Pizza?

Always precook bacon or other meats before topping a pizza. Pizza bakes quickly and won’t fully cook raw bacon. You can use turkey bacon, regular bacon, or bacon bits — just make sure they are fully cooked and crumbled before assembling.

Using Fresh Tomatoes

Choose lower-moisture tomatoes such as Roma to avoid a soggy pizza. Scoop out the seeds and watery center and use the firmer tomato flesh. If using larger varieties like beefsteak, pat slices dry on paper towels to remove excess juice.

Low-moisture, meaty tomatoes work best for this pizza. Scoop and discard the watery core before chopping so the crust stays crisp. For thicker-crust pizzas you can par-bake the crust a few minutes before adding toppings to prevent a doughy center.

Use your favorite tomatoes but remove excess water so the pizza stays crisp.

For a thinner crust this recipe bakes through without pre-baking. If you prefer a thicker crust, consider partially baking the dough first.

Ingredients

  • ½ recipe Pizza Dough

Pizza Toppings

  • 2 tablespoons Butter
  • 6 large Eggs
  • ⅛ cup Heavy Cream
  • 8 slices Turkey Bacon, fully cooked and crumbled
  • ½ medium Onion, chopped
  • 2 Roma Tomatoes, seeds removed and chopped
  • 1 cup Cheddar Cheese, shredded
  • 1 cup Mozzarella Cheese, shredded
  • Cooking Spray

Cream Gravy

  • 1 tablespoon Butter
  • ½ cup Heavy Cream
  • 1 tablespoon Flour
  • ½ teaspoon Salt
  • ½ teaspoon Pepper

Instructions

  1. Make pizza dough according to your chosen method or use pre-purchased crust. If using homemade dough, prepare several hours ahead or the day before for best results.

Scrambled Eggs

  1. Melt butter in a skillet over medium-low heat (2–3 minutes).
  2. Whisk eggs and cream together until combined.
  3. Add egg mixture to the skillet and cook gently, stirring slowly, until just set, about 6–10 minutes. Avoid overcooking.

Make Cream Gravy

  1. Melt butter in a small saucepan over medium heat (1–2 minutes).
  2. Whisk cream, flour, salt and pepper in a bowl until smooth. Add to the saucepan and cook, stirring often, until thickened, about 5–6 minutes.

Assemble Pizza

  1. Preheat oven to 425°F (220°C).
  2. Spray a pizza pan with cooking spray. Place crust on the pan and pinch the edges if desired to help contain the gravy.
  3. Spread the cream gravy evenly over the dough with the back of a spoon or spatula.
  4. Top with scrambled eggs, crumbled bacon, chopped onions, tomatoes and cheeses.
  5. Bake 15–20 minutes or until the crust is golden and cheese is melted. Let cool slightly, then slice into 8 pieces. Garnish with chopped green onion, freshly cracked pepper and red pepper flakes if desired.

Notes

Makes 8 slices. Serve immediately. Garnish with chopped green onion and hot sauce if desired.
