- 2 tablespoon flat-leaf parsley – finely chopped
- 1 teaspoon dried oregano
- 1 large egg – lightly beaten
- ⅔ cup (70 g) panko breadcrumbs
- sea salt and freshly ground black pepper – to taste
For Cooking:
- 2-4 tablespoon extra virgin olive oil – more if needed
