Ingredients:
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup packed brown sugar
3 eggs, separated
2 cups sour milk or buttermilk
2 ripe bananas, mashed
1 cup butterscotch chips
Directions:
In a large bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg and brown sugar.
In a separate bowl, beat the egg yolks until smooth. Add the sour milk (or buttermilk) and the mashed bananas, stirring to combine.
Pour the wet mixture into the dry ingredients and stir until just combined; avoid overmixing to keep the waffles tender.
In a clean mixing bowl, whip the egg whites until they form stiff peaks. Gently fold the beaten egg whites into the batter in two additions to keep the mixture light and airy.
Fold in the butterscotch chips gently so they are evenly distributed.
Preheat and lightly oil your waffle iron. Pour an appropriate amount of batter onto the hot iron and cook until the waffles are golden brown and crisp. Between batches, wipe away any melted butterscotch from the iron to prevent burning.
Serve warm with maple syrup, butter or your favorite toppings.
