This stewed yuca is a flavorful and comforting side dish commonly served in Colombia alongside beef, pork, chicken, and seafood.

What is Yuca?
Yuca, also called cassava in English, is the starchy root of the cassava plant. Widely used across Latin America (known as mandioca in Brazil), yuca can often be substituted for potatoes in many recipes. In Colombia it is used in soups, stews, mashed preparations, fries and even some desserts. When cooked, yuca becomes tender with a mild, slightly sweet flavor similar to potato.

Ingredients
- 1 pound frozen yuca
- 4 cups water
- ½ teaspoon salt
- 1 chicken bouillon tablet
- ¼ teaspoon sazón Goya con Azafrán
- 1 cup hogao (tomato and onion sauce)
Instructions

In a large pot, combine the water, chicken bouillon tablet, sazón and salt. Bring to a boil. Add the yuca, reduce heat to medium and simmer about 15 minutes or until fork-tender.

Drain the yuca, reserving 1 cup of the cooking liquid.

Return the pot to the stove, add the hogao and the reserved cup of liquid. Bring to a gentle boil and cook 5 minutes to blend the flavors.

Place the yuca on a serving plate and spoon the warm hogao mixture over the top. Serve immediately.
