It’s summer and hot outside, but cravings for chocolate never take a vacation. When I want chocolate cake without heating up the oven, I make waffles from cake mix. It’s fast, easy and results in four indulgent chocolate waffles in about eight minutes.

How to make cake mix waffles:

For dessert for two, use 1 1/4 cups of dry chocolate cake mix. Whisk it with one egg, about two tablespoons of neutral oil and 1/3 cup water. Stir in two tablespoons of mini chocolate chips if you have them—optional, but they boost the chocolate flavor.

Portion the batter into a preheated waffle iron and cook until set. Depending on your waffle iron size, this recipe yields four waffles. The texture will be cake-like rather than crisp, since you’re cooking cake batter instead of waffle batter.

Top the waffles however you like. I served mine with a scoop of ice cream and a quick blackberry sauce, but on a serious chocolate day I’ve used chocolate ice cream, syrup and sprinkles. The simple flavor combinations let the cake-like chocolate waffles shine.

Ingredients

  • 1 1/4 cup dry chocolate cake mix
  • 1 large egg
  • 2 tablespoons neutral oil (such as grapeseed)
  • 1/3 cup water
  • 2 tablespoons mini chocolate chips (optional)
  • Ice cream, for serving

Blackberry sauce:

  • 1 cup fresh blackberries
  • 1 tablespoon granulated sugar
  • 2 teaspoons crème de cassis (black currant liqueur), optional

Instructions

  1. Preheat a waffle iron to the highest setting.
  2. In a small bowl, whisk together the cake mix, egg, oil, water and chocolate chips.
  3. Scoop batter into the waffle iron. (A Belgian waffle iron that holds 1/2 cup batter per waffle will make four waffles from this recipe.)
  4. Cook the waffles until set.
  5. While the waffles cook, make the blackberry sauce: combine blackberries, sugar and a splash of water in a small skillet. Simmer until the berries break down into a sauce, about 5 minutes. Stir in crème de cassis if using.
  6. Top each waffle with a scoop of ice cream and spoon the blackberry sauce over the top.
