Holiday baking season is here, and I couldn’t be more excited. The holidays bring parties, comforting food, and a festive atmosphere—plus everyone seems to give themselves permission to enjoy sweet treats.

These cookies are ridiculously simple. Combine six ingredients in a bowl, stir with a spoon—no special equipment—scoop onto a baking sheet, flatten slightly, bake, cool, and enjoy.

Important: don’t skip the cooling step. If the cookies aren’t completely cool they’ll crumble when you pick them up. Let them set on the baking sheet so they hold together and develop a nice texture.

  • Pure vanilla extract
  • Light brown sugar
  • Chocolate chips
  • Dried cranberries

Creamy SunButter brings bold sunflower flavor, healthy fats, protein, and a little fiber to these cookies. I skipped chemical leaveners (baking soda or powder) because they can react with sunflower seed butter and cause a greenish tint. The egg provides structure and helps the cookies hold together.

I used light brown sugar for a subtle molasses note without an overpowering flavor. If you want to experiment with vegan egg substitutes like a flax or chia egg, let me know how that turns out.

Ingredients

  • 1 large egg
  • 1 cup Creamy SunButter
  • 1/3 cup light brown sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup chocolate chips
  • 1/4 cup dried cranberries

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, mix together SunButter, egg, sugar, and vanilla until well combined. Fold in chocolate chips and dried cranberries.
  3. Scoop dough into 1-inch balls and place on a parchment-lined baking sheet. Slightly flatten each ball with the palm of your hand. Bake for 10 minutes, until the tops appear set.
  4. Remove cookies from the oven and let them cool completely on the baking sheet. This step is very important. Once cooled, store in an airtight container.
