Green Bean Casserole with Crispy Onion Crunch from French’s

If you grew up near a holiday table in the fall, you probably know this one: the classic green bean casserole—the creamy, comforting bake that’s been a staple on Thanksgiving tables for generations. It’s nostalgic, simple, and reliably satisfying. I love taking those familiar family recipes and giving them a small, thoughtful twist. This version of French’s green bean casserole keeps the comforting base you expect but boosts texture and flavor by adding shredded cheese, crushed Ritz crackers, and sliced almonds. The result is crispier, crunchier, and somehow even cozier than the original.

Ingredients:

  • 1 290ml can condensed cream of celery soup (or cream of mushroom)
  • 3/4 cup 2% milk or higher fat
  • 2 tsp soy sauce
  • 5-6 cups green beans, cut in half and parboiled
  • 1 1/2 cups French’s crispy fried onions
  • 1 cup crushed Ritz crackers
  • 3/4 cup shredded cheese, like cheddar or gouda
  • 1 cup almond slices

Instructions:

  • Preheat the oven to 350°F (175°C).
  • In a small oven-safe casserole dish or bowl, whisk together the cream of celery soup, milk, and soy sauce until smooth and combined.
  • Fold in the green beans, ⅔ cup of the French’s crispy fried onions, and ½ cup of the almond slices. Season lightly with salt and pepper if desired.
  • Sprinkle the crushed Ritz crackers, shredded cheese, remaining fried onions, and remaining almonds evenly over the top of the casserole.
  • Place the dish in the oven and bake for about 30 minutes, until the topping is golden brown and the casserole is bubbling around the edges.
  • Let the casserole rest for 5 minutes before serving to allow the sauce to thicken slightly. Serve warm and enjoy the perfect mix of creamy, crunchy, and nostalgic.

Enjoy!

A Love Letter to the Classic French’s Green Bean Casserole

I have a soft spot for the original green bean casserole. It’s the ultimate easy side dish—pantry staples come together to create something that feels like a warm hug. Growing up, someone always showed up at Thanksgiving with a casserole dish of it, and the French-fried onions would turn golden in the oven, filling the kitchen with buttery, comforting aroma.

I still love those fried onions, but I also enjoy a pleasant surprise in a familiar dish. This version stays true to the classic while adding contrast: more crunch, a touch of nuttiness, and a cheesy finish.

    What Makes This Version Special

This casserole still uses the familiar base: condensed cream soup (cream of celery or mushroom), milk, a splash of soy sauce, and tender green beans. The difference comes from the topping: crushed Ritz crackers bake into a buttery crust, sliced almonds add toasty crunch, and shredded cheese melts into a gooey layer that ties everything together. French’s crispy fried onions remain for that classic, irresistible finish.

The combination keeps the comforting character of the original while adding fresh texture and a slightly more complex flavor profile.

French’s Green Bean Casserole: Let’s Talk Beans

Canned green beans work fine and save time, but if you prefer a fresher texture, use fresh green beans parboiled until just tender. They keep more color and snap, which contrasts nicely with the creamy sauce. If you use frozen beans, thaw them fully and pat them dry before folding them into the mixture so the sauce isn’t watered down.

    How It All Comes Together

This casserole is straightforward and built for busy cooks. Whisk the condensed soup, milk, and soy sauce until smooth for the base. Fold in the beans, most of the French’s crispy fried onions, and some almond slices for texture. Season with a little salt and pepper if you like.

Transfer the mixture to a casserole dish, then layer the crushed Ritz crackers, remaining onions, the rest of the almonds, and shredded cheese on top. Bake until the topping is golden and the edges are bubbly—about 30 minutes. Let it rest for a few minutes so the sauce sets slightly, then serve warm.

French’s Green Bean Casserole Tips & Tricks

    1. Mix it up:
Swap cream of celery for cream of mushroom if you prefer—both work well and alter the flavor subtly.

    2. Cheese choices:
Cheddar adds sharpness, while Gouda gives a slightly smoky, creamy melt. Pick whichever you prefer or mix both.

    3. Serving idea:
This is wonderful on its own or served alongside roasted turkey and other holiday mains.

    4. Storage & leftovers:
Store leftovers covered or in an airtight container in the fridge for up to three days. Reheat in the oven to help the topping stay crisp.
