I didn’t want to skip Thanksgiving stuffing just because I’m following a low-carb plan, so I developed a keto-friendly version that keeps the familiar savory flavors of the holiday. It’s simple to prepare and makes a comforting side dish that fits a low-carb lifestyle. In my test I used Carbquik as the base for the breadcrumb substitute.

Carbquik low-carb baking mix works similarly to traditional baking mixes, but with far fewer carbs and more fiber. I started by mixing a simple biscuit-style batter, then added dried herbs—sage, thyme and parsley—to mimic seasoned breadcrumbs.

Roll the mixture out fairly thin on a baking sheet and bake until set. Once cooled, cut or break the baked sheet into pieces and pulse or crush them into breadcrumb-like crumbs. Toast the crumbs in a hot oven, turning once, until both sides are lightly browned and dried out. These make an excellent keto breadcrumb alternative—texture-wise they’re like breadcrumbs, though the flavor is a bit more fibrous due to the higher fiber content.

From there, assemble the stuffing the way you normally would. I like to sauté onion and celery until soft, then combine them with the toasted Carbquik crumbs, melted butter, and enough chicken or vegetable broth to moisten the mixture. You can add cooked sausage or giblets if you prefer a heartier stuffing.

Once combined, spread the stuffing in a buttered baking dish and bake about 25 minutes at 350°F (175°C) until heated through and lightly golden on top. Serve warm alongside your other holiday dishes—like traditional stuffing, it reheats well and makes great leftovers.

If you can’t find Carbquik, there are several premade low-carb breads and mixes that also work for making keto breadcrumbs. Many of them can be baked and processed the same way to produce a suitable crumb base for stuffing.

Keto Thanksgiving Stuffing – Carbquik

Ingredients
- 2 cups Carbquik
- 1 cup water
- 2/3 cup vegetable or chicken broth
- 2 tbs mixture of sage, parsley & thyme
- 6 tbs butter, melted
- 1/2 cup chopped celery
- 1/3 cup chopped onion
Instructions
- Mix Carbquik, water and spices and form into a ball.
- Roll the mixture about 1/2 inch thick on a baking sheet (lining with a silicone mat makes cleanup easier).
- Bake at 350°F for 12–15 minutes, taking care the bottom doesn’t burn.
- Let cool, then cut or break the baked sheet into small pieces and form breadcrumbs.
- Turn the oven to 450°F and toast the crumbs about 10 minutes, turning once so both sides brown. Set aside.
- Sauté the onion and celery until softened.
- Mix the toasted crumbs with broth, sautéed vegetables, and melted butter until moistened.
- Butter an 8-inch baking dish and spread the stuffing into it.
- Bake at 350°F for 25 minutes, then serve warm.
