Autumn Thanksgiving Centerpiece Ideas for Memorable Tablescapes

Pumpkin-filled Thanksgiving centerpieces bring warm fall color to your table using small pumpkins, squash, flowers, and greenery. They’re an easy, charming way to decorate for Thanksgiving while getting extra use from pumpkins you may have used for Halloween.

There are two great benefits to this project: the pumpkins become natural vases for fresh flowers, and the seeds you scoop out can be saved and roasted for snacks or sprinkled on salads.

Before guests leave, consider sending each family home with a centerpiece—these make lovely, seasonal gifts and are a sweet way to share the joy of the day.

How to Make Thanksgiving Centerpieces

Our family has used pumpkin flower centerpieces for years. It’s a tradition my dad loved, and each year guests looked forward to the bright, low-arranged blooms that make conversation and the table feel festive without blocking views across the table.

My Top Project Tips

  • Use leftover pumpkins from Halloween as your Thanksgiving decorations.
  • Choose pumpkins or squash that sit flat so they won’t roll or tip on the table.
  • Arrange flowers the day before the event and keep them chilled until you set the table.
  • Refill the soaked floral foam with water during the day to keep blooms fresh.
  • Gather flowers and greenery from local sources or your own garden for authentic fall texture.
  • Buy a few premium blooms like roses and pair them with more affordable filler flowers and greenery.
  • Mix in some dried elements—wheat, dried leaves, and other fall pieces add interest.
  • Use a variety of pumpkin and squash shapes and colors to create an eclectic, seasonal display.
  • Keep the arrangements relatively low so they don’t block conversation across the table.
  • Move arrangements easily as the table fills, or place extras near the buffet or drinks table.
  • Add ribbon bows to wooden skewers and tuck them into arrangements for a polished touch.
  • Send centerpieces home with guests at the end of the celebration—they last a few days and are best kept on a plate.

Materials You Will Need

Fall-colored flowers – about 2 bunches or gather clippings from your garden.

1 block floral oasis – soakable floral foam for fresh flowers.

Serrated knife

Garden clippers or scissors

2–3 wooden skewers

Bucket of water – to hold stems while arranging and to soak the oasis.

5–6 small pumpkins and squash – try Sugar Pie pumpkins, kabocha, acorn, and striped varieties for color and shape contrast.

Flower suggestions: Bright fall shades work beautifully—yellow-orange roses, sunflowers, daisies, eucalyptus, and leafy greens like lemon leaves pair well together.

Pumpkins and squash options

Step 1: Carve the pumpkins like a jack-o’-lantern by removing the top, or for squash, lay them on their side and cut a hole in the top so they sit steadily. Save the tops to use as lids or decoration.

Carving pumpkins and scooping seeds

Step 2: Scoop out seeds and pulp into a bowl. The cleaned seeds can be roasted for a crunchy snack or frozen in zip-top bags to roast later.

Step 3: Soak the floral oasis in water until fully hydrated. Cut it to size with a knife and place the soaked pieces inside each pumpkin or squash.

Step 4: Trim flower stems to a shorter length and insert them into the oasis. Use leaves and greenery to conceal the foam and create a full, natural look. Continue adjusting stem lengths so arrangements remain low and balanced.

Step 5: Attach a short skewer to the underside of the pumpkin tops and press them into the arrangement to anchor lids or decorative pieces. Add ribbons or dried accents as desired.

  • Make arrangements ahead and keep them cool.

  • Mix fresh and dried materials for texture and seasonal character.
  • Give centerpieces to guests to enjoy at home, but advise them to place arrangements on a plate since they are perishable.
