Cinnamon Sugar Flatbread Crackers Recipe and Serving Ideas

One of my clearest childhood memories is eating toast spread with butter and cinnamon sugar at my grandparents’ house.

That simple treat cemented my lifelong love of cinnamon sugar. My grandmother had a little shaker shaped like a man that we used to pass around — it felt whimsical and special. These days I’m perfectly happy mixing cinnamon and sugar in a bowl.

After making easy cheesy whole wheat crackers and everything flatbread crackers, I wanted to try a sweeter version. It felt like the right moment to shift from savory crackers to something that satisfied my sweet tooth.

These cinnamon sugar flatbread crackers are incredibly simple — you can prepare and bake them in about 20 minutes, making them a fast, delicious snack. Whether you cut them into little squares or leave them as longer flatbreads, they’re great on their own or topped with something tasty.

I like to add a bit of butter (or a butter-like spread) before sprinkling with cinnamon sugar. It helps the topping stick and boosts the flavor — and yes, I know not everyone uses margarine, but it works wonderfully here.

I made a large batch recently and we snacked on them all week. They’re fantastic with peanut butter and banana, with jelly, with cream cheese, with fruit salsa, or even with a slice of cheese for a sweet-and-salty contrast. Personally I’m not one for skimpy cheese portions — a hearty slice works best.

Cinnamon Sugar Flatbread Crackers

Makes a generous batch

1 cup all-purpose flour

3/4 cup whole wheat pastry flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup + 2 tablespoons warm water

1/4 cup olive oil

2 tablespoons sugar + 3/4 tablespoon cinnamon for sprinkling

Preheat the oven to 400°F (200°C).

Whisk together the flours, baking soda, salt, and cinnamon in a bowl. Add the warm water and olive oil and stir until a dough forms, finishing by kneading gently with your hands. Shape the dough into a ball.

Lightly dust a baking sheet with flour and roll the dough as thin as possible with a rolling pin. Evenly sprinkle the cinnamon-sugar mixture over the surface, then slice into squares or long strips with a pizza cutter. Bake for about 10 minutes, or until the crackers are golden and crisp. Allow to cool completely before storing or serving.

Note: For an extra indulgent snack, try topping a peanut-butter-covered cracker with crisp bacon — I’ll be testing that combination next time.
