Copycat Boston Market Tuscan Herb Chicken Grilled on Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are using the Char-Broil Smoker-Roaster Grill, cook with the lid open and set the heat to High. You may need to adjust the cooking time.

This copycat Boston Market Tuscan Herb chicken is the reason I bought my Char-Broil Big Easy: it’s remarkably flavorful and easy to make. The Big Easy cooks poultry to juicy perfection with crisp, well-seasoned skin every time. For this recipe I used split, bone-in, skin-on chicken breasts. The herb mixture tucks beneath the skin so the meat soaks up the flavor, producing crunchy skin and tender, moist chicken — easily one of my favorite ways to prepare chicken.

Any Chicken Cuts Will Do

You can adapt this technique to different cuts. If you prefer skinless breasts, simply rub the herb oil directly over the meat. The original version of this recipe is for a whole chicken and that works as well — just check temperatures in several places before removing the bird. For convenience and even cooking I like split, bone-in, skin-on breasts for the Big Easy, but use what you prefer.

Equipment

  • Char-Broil Big Easy
  • Char-Broil Bunk Bed Basket (optional for cooking more than two breasts)

Ingredients

  • 4 chicken breasts split, bone-in, skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 2 cloves garlic crushed
  • 1 ½ teaspoons Kosher salt
  • 2 ½ teaspoons freshly ground black pepper

Instructions

  • Preheat your Big Easy and lightly spray the basket with non-stick spray.
  • Gently separate the skin from the meat with your fingers to create a pocket between the skin and the breast.
  • In a small bowl combine the olive oil with the dried basil, oregano, rosemary and crushed garlic.
  • Rub the herb oil mixture into the pocket under the skin, being generous so the meat soaks up the flavors.
  • Season the outside of the breasts with Kosher salt and freshly ground black pepper.
  • Place the chicken in the Big Easy cooker and cook until the thickest part of the breast reaches 165°F. Cooking time varies by size and conditions; estimate about 10–15 minutes per pound.
  • Remove the chicken and serve immediately.

Notes

If you plan to cook more than two split chicken breasts at once, consider using a bunk bed basket to double up the capacity.
