Ingredients

  • 8 ounces cream cheese softened
  • 2 cups sour cream
  • 10 slices hickory smoked bacon fried and crumbled
  • 2 cups cheddar cheese shredded
  • 3 green onions chopped
  • 4 oz. pimentos drained, rinsed and diced
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. cayenne pepper

Instructions

  • Preheat the oven to 400°F (200°C).
  • Reserve 1/8 cup of the shredded cheese and 1/8 cup of the crumbled bacon for the topping before baking.
  • In a large bowl, combine the softened cream cheese, sour cream, most of the shredded cheddar, chopped green onions, diced pimentos, salt, black pepper, cayenne, and all but the reserved bacon and cheese. Mix until smooth and uniform.
  • Transfer the mixture to a 1 1/2-quart baking dish and spread it evenly. Sprinkle the reserved cheese and crumbled bacon over the top.
  • Bake uncovered for 25–30 minutes, or until the dip is hot and bubbly and the topping is lightly browned.
  • Serve warm with fresh vegetables, crackers, chips, or toasted bread for dipping.
