Buffalo chicken dip is a staple at our gatherings and on Game Day, so I wanted to reinvent it as a handheld. Taquitos felt like the perfect vehicle. Wrapping the creamy, tangy Buffalo filling in a flour tortilla was a win—crispy, cheesy, and full of flavor.

My husband, a serious Buffalo wing fan, gives these taquitos two thumbs up. I do swap one ingredient from the classic dip: instead of canned chicken I prefer shredded rotisserie chicken for better texture and flavor, but you can use canned chicken if that’s what you have on hand.

- Serving size depends on whether you keep the taquitos whole or cut them in half. Keep them whole for fewer servings or cut them to stretch the batch.
- Set out a dipping bowl of ranch dressing; blue cheese also pairs nicely with Buffalo flavors.

Buffalo Chicken Taquitos

Ingredients
- 1 (8 oz) package cream cheese, softened
- 1/2 cup ranch dressing
- 1/2 cup Buffalo sauce
- 1 rotisserie chicken, shredded (or 2 cans chicken, drained)
- 1 cup shredded cheddar cheese
- 24 flour tortillas, fajita size
- Non-stick cooking spray
Directions
- Preheat the oven to 450°F (230°C).
- Spray a baking sheet with non-stick cooking spray and set aside.
- In a large bowl, blend the softened cream cheese, ranch dressing, and Buffalo sauce until smooth.
- Add the shredded chicken and shredded cheddar to the cream cheese mixture and stir until evenly combined.
- Place about a heaping tablespoon of the chicken mixture near the edge of each tortilla and spread it into a thin line.
- Roll each tortilla tightly around the filling and place seam-side down on the prepared baking sheet.
- Repeat until all taquitos are assembled.
- Generously spray the tops of the taquitos with non-stick cooking spray.
- Bake for 10 minutes, flip each taquito, then bake an additional 5 minutes or until golden and crisp.
