GJ’s Huli Huli Chicken

If you find yourself on Thursday, Friday, or Saturday on the North Kohala side of the Big Island, follow your nose to GJ’s Huli Huli Chicken. On Thursdays, the stand appears at the Hawi Welcome Center parking lot on the east side of Waimea, where the scent of smoke drifting over Mamalahoa Highway will alert you. Fridays bring GJ’s to the lot across from the Blue Dragon near Kawaihea (pronounced ka-WHY-hi) Harbor, about 20 minutes north of Mauna Lani on Akoni Pule Highway. Saturdays you can find Gil set up in the Kamuela Liquor parking lot in Waimea.

Gil Tabafunda has transformed the bed of an old truck into a charcoal-fired trailer, loading it with coals that heat a large rotisserie grill. The grill roasts juicy chickens and ribs—beef and pork—until perfectly caramelized. A half chicken is generous enough for two, though you may not want to share, especially when paired with a refreshing rice noodle salad. For many visitors, this is one of the best meal decisions they make while on the island.

If you’re downwind, GJ’s is easy to locate by smell. Come early to avoid missing out—these popular meals sell quickly.
