Jungle Cooler: Portable Evaporative Air Cooler for Outdoors

Tastes of the jungle in a delicious, refreshing drink! A blend of tropical fruit juices and creamy coconut milk makes this a summer favorite.

When the weather warms up, we reach for chilled drinks — sodas, flavored waters, juices and cocktails, alcoholic and non-alcoholic alike. The Jungle Cooler is one of my go-to non-alcoholic cocktails that I always keep in the refrigerator. The coconut milk is the ingredient that truly brings this drink to life.

I like to call it a cocktail, though it could also be described as a fruity punch. The passion fruit cordial I use is a concentrate that’s typically mixed one part cordial to two parts water, but feel free to use whatever passion fruit syrup or concentrate you have on hand.

Passion fruit is also known as granadilla in some countries — different names for the same vibrant fruit. Here in South Africa both names are used, though granadilla is common.

A tropical, fruity cooler made with pineapple and orange juices, passion fruit cordial and creamy coconut milk. Serve over ice with a pineapple slice garnish.

Ingredients

  • 4 cups Pineapple Juice
  • 2 cups Orange Juice
  • 1 cup Passion Fruit Cordial concentrate or syrup
  • 1 cup Coconut Milk
  • 4 Pineapple Slices halved, to serve

Instructions

  1. Place all ingredients except the pineapple slices into a blender and blitz until smooth and well combined.
  2. Pour into tall glasses over ice (fruit ice cubes are a nice touch), garnish each glass with a pineapple slice and serve immediately.
