I can’t recall the last time I spooned straight sweetened condensed milk — in Ecuador we call it “leche condensada.” I remember enjoying it most when visiting family; my mom makes the best desserts and often used sweetened condensed milk in them. On our last quick visit we celebrated several family milestones, but the most dessert-filled visit was the Christmas before that, when my mom showered us with her amazing sweets after lunch.

My mom is an incredible baker. She may not enjoy everyday cooking, but when it comes to desserts she’s unstoppable. Relatives and friends back home always ask her to bring desserts for gatherings because they know she does an incredible job. Her talent never fails to amaze me.

She makes so many favorites: Pastel de Zanahoria (Carrot Cake), Postre de Tres Leches (Tres Leches Dessert), Flan de Coco (Coconut Flan), Torta de Maqueño (Banana Cake), Pie de Limón (Lemon Meringue Pie), and Torta Helada de Mora (Frozen Blackberry Meringue Cake). They’re all unforgettable. Thinking about them makes me want to fly to Ecuador and have her make those treats again — I miss her cooking.

Many of those desserts rely on ingredients that aren’t considered Paleo, such as white sugar, dairy milk, or certain wheat-based components like graham crackers. The good news is some of those ingredients have easy Paleo-friendly substitutions. You can make homemade versions of staples or find suitable gluten-free options at specialty stores. Substitutes make it possible to enjoy classic flavors while sticking to a Paleo approach.

Description

This Paleo Sweetened Condensed Milk is simple to make and wonderfully versatile. Use it in desserts, coffee, or enjoy a spoonful on its own.


Ingredients

  • 2 14-oz cans full fat coconut milk
  • 1/2 cup honey

Instructions

  1. Pour the coconut milk into a saucepan and warm over medium heat. Whisk continuously until it comes to a gentle boil.
  2. Reduce the heat and add the honey. Let the mixture simmer, whisking frequently, for about 30 minutes until reduced by roughly half and slightly thickened.
  3. Remove from heat and allow it to cool completely. Transfer to a jar with a lid and refrigerate. The condensed milk will thicken further as it cools.
