Healthy Sweet Potato Waffle Sandwiches
Breakfast sandwiches are a brilliant idea: all the best flavors—eggs, sausage, avocado—wrapped into a convenient package. I wanted to turn my favorite sweet potato into the sandwich base, so I created sweet potato waffles that work perfectly as the “bread.”

Why you’ll love these gluten-free breakfast sandwiches:
- The waffles are made from grated sweet potato and a few pantry ingredients, so they’re a quick option for busy mornings.
- They’re customizable—cook your eggs whichever way you prefer, or omit them entirely for a lighter sandwich.
- Fully cooked sausage links (like Jones Dairy Farm Golden Brown All Natural Pork Sausage) add protein and save time when assembling breakfast.
How to Make Sweet Potato Waffle Breakfast Sandwiches
Start by making the waffles. The batter is simple: whisk eggs, coconut flour, avocado oil, arrowroot, salt, and pepper, then fold in grated sweet potato. I keep the skins on the sweet potatoes for extra fiber; once shredded and cooked, the skins are barely noticeable.

Cook the batter in a waffle iron for about 6 minutes, until the exterior is crisp and the interior is tender and sweet. While the waffles cook, prepare your sandwich fillings. I like fried eggs for richness, but scrambled eggs work well for feeding a crowd.

Fully cooked sausage links are convenient for a quick protein addition. Heat them in a skillet until golden and warm through, then assemble your sandwiches by stacking vegetables, sausage, and egg between two sweet potato waffles.

Topping Ideas for Gluten-Free Breakfast Sandwiches
- Avocado
- Tomato
- Arugula
- Cheese, if you include dairy
Can I use regular waffles instead?
Yes. Use any waffles you enjoy to build these sandwiches. A gluten-free oatmeal waffle or another favorite would work well.
Can I make these without eggs?
I haven’t tested an egg substitute yet. If you need an egg-free or vegan version, watch for a future variation—I plan to experiment with replacements.
Can I use sweet potato puree instead of grated raw sweet potato?
Puree produces a softer, more fragile waffle that can crumble under sandwich fillings. Grated raw sweet potato creates a sturdier waffle that holds up better as sandwich bread.
