  • 1 large egg, lightly beaten
  • 3 tablespoons (42 grams) unsalted butter, melted

Instructions
  1. Preheat the oven to 400°F (200°C). Line two baking sheets with parchment paper and lightly spray or grease them.
  2. Turn out the prepared pretzel dough and divide it into 40 equal pieces (about 1 ounce each). Starting from the center and rolling outward, shape each piece into a log about 4 to 6 inches long and ¾ inch in diameter. Tie each log into a simple knot and place on the prepared pans. Cover and let rest 5 to 10 minutes.
  3. Bring a large pot of water to a boil over medium-high heat and add the baking soda. Use a pot deep enough to allow for the water to foam up—once the baking soda is added the water level will rise.
  4. Carefully lower each knot into the boiling baking soda solution and poach for 30 seconds per side. Remove with a large slotted spoon and return to the prepared pans. Brush each knot with the beaten egg.
  5. Bake until the knots are golden brown, about 8 to 10 minutes. Remove from the oven, brush with melted butter, and sprinkle with kosher salt or your chosen toppings.
